Pasta with Spicy Coconut Cream Sauce & Veggies

1 pkg. Pasta of choice
1 can thick coconut milk
1 C frozen Peas
1/2 onion finely chopped
2 cloves garlic minced
1 inch ginger grated
1-3 tsp chili flakes. Depends how hot you like. I used the tablespoon
3 large handful of spinach chopped
I pkg. of butternut squash cubes. Roasted is best but pan fried ok
1/2 of a large red Capiscum

Cook pasta according to pkg directions
Meanwhile sauté the vegetables ( excluding spinach) in a little coconut oil
Add the coconut milk and spices and simmer
Fold in spinach a little at a time until all blended.
Serve over pasta
