Yellow Zucchini Squash Caserol

Some friends gave me some veggies from their garden and a suggestion for a zucchini casserole. I had to modify it to be GF & Vegan. Turned out spicy & delicious. Taste much better than it looks šŸ™‚

1 lrg Yellow Zucchini quartered & thinly sliced
1/3 C Almond Milk
1/2 C ground up Roasted salted & peppered Cashews
3 cloves Garlic
Tsp fresh dried basil crumbled
1/8 tsp ground pink peppercorn
Sprinkle of Celtic sea salt
1/4 C Daiya mozzarella shreds
1/3 c GF peppered crackers ground

Mix all together & bake @ 400 for 30 minutes
