Italian Polenta


Italian Polenta

1 tube San Gennaro Polenta
1/2 Jar Classico Fire Roasted Pizza Sauce
1 small can sliced olives
1/2 Red Bell Pepper
3 green onions
1 lrg Garlic Clove
3 marinated Artichoke hearts Chopped
1 oz marinate juice from artichokes
1tsp capers
1/2 can chopped tomatoes drained
2 oz red wine
Pinch of pink Himalayan salt
A few grinds of pink peppercorn
Dash of Italian seasoning
Enough olive oil to sauté vegetables
1/4 cup Daiya Mozzarella Style cheese

Sauté vegetables starting with fresh and adding can & jar items. Add wine and artichoke marinate juice. Simmer until reduced & thickened. In meantime season polenta with salt, pepper & italian seasoning. Grill 1/2 inch polenta rounds in a skillet. Place polenta in individual oven safe serving bowls. Cover with sauce and cheese and bake for 10 min on 350. Just enough to melt the cheese.
