Blackeyed Peas & Greens

Yesterday my Roommate, Justina, helped me cook up some traditional New Years food. I cooked the Blackeyed peas but her being a Georgia girl I thought it best to leave the greens cookin in her court.


2 bunches of Collard Greens
1 can Fire Roasted Tomatoes
2 Green Onions
12 sprigs Cilantro
1 tsp Pink Salt
3 C Vegetable Broth
1 tsp Smoked Paprika
2 tsp Red Pepper Flakes
Dash of Apple Cider Vinegar (optional)


1 bag frozen Blackeyed Peas
2 Green Onions
10 sprigs Cilantro
1 tsp Garlic Salt
1 tsp Black Pepper
1 1/2 C Vegetable Broth
1 C Water

We cooked both for about an hour on medium heat. She used her small cast iron Dutch oven & I a 2 qt sauce pan.
